Triggerfish feed very heavily on Blue Crab, Swimmer Crab, Urchin, Shrimp and Mollusks. This translates to a beautiful Sweeetness and muscle striation. The Striation allows for the flesh to flake into texturally phenomenal strands with a subtle tooth. Brilliant for saute with citrus or cream. Saute, Broil, Grill, Pan Roast.

Golden Tilefish grow quite large, with market sizes ranging from 10-20 lbs. They produce a beautiful "Baseball" cut with a gorgeous yellow dotted edible skin. Golden Tilefish feed almost exclusively on Crab, Shrimp, Clams, and other shellfish. This translates to a very sweet and moist flesh that cooks to a paper white. The cooked flesh flakes to a large, almost crab like, piece. Perfect for almost any cooked preparation. Saute, Broil, Grill, Pan Roast.

Pacific Triggerfish are renowned for their "Sweetness". A viracious eater of Shellfish, mostly Crab, lend a delightful light flavor. The strong currents of its environment give this fish a firm texture, but the cooked flesh is as flaky as any available. Trigger works very well with fruits and acids. Butter loves Trigger also.
