The Mano de Leon or “Paw of the Lion” is aptly named by Latino fishermen for the scallops large size and orange coloration similar to that of a lions paw. These scallops have absolutely no chemical and are tacky and they glisten. When cooked slightly medium, they are moist and have a distinct flavor reminiscent of the ocean. This scallop is a fantastic compliment to any menu and will wow your customers.
The Bedford Bream are the most abundant of these "Snappers", so for that reason they are much more menu versatile than flashier species. They have a beautiful white translucent flesh which cooks up very nicely, with a firm flake and texture in the mouth. The excellent quality, sweet flavor, and value, all combine to make our clients sit up and take notice!
King crab is low in saturated fat and a good source of vitamin B12, phosphorus, zinc, copper and selenium. It has fleshy claws and legs with sweet, rich meat. All of our Golden King Crabs come from Alaska only and rate a "Best Choice" Green by FishChoice. Bake, Boil or Steam.
