This fish is not related to the Warehou species or other members of the Centrolophidae family which are called Butterfish in Japan. It is also not related to Walu or Escolar that is sometimes marketed as Butterfish in Hawaii. This is the real Butterfish, truly worthy of its name. Very Rich and Delicate! Ling is a Cusk Eel also known as Kingclip. It has a texture similar to Lobster and Monkfish. Ikijime Ling is perfect for aSashimi as it is a light white with a creamy texture. The fish are caught between 100 and 1500 feet deep. Very fatty and very sweet.
