Cold clean waters enjoy a brisk tidal flow in depths up to 600 feet. Gindara Sablefish are not a natural host for sea-lice and growing in its native environment, are naturally resistant to local pathogens and bacteria. Gindara Sablefish mature in Kyuquot Sound without the use of antibiotics, hormones, or chemical treatments. Gindara Sablefish are cultured among the lowest population densities of any farmed animal, land or sea. Revolutionary sea cage design has virtually eliminated the threat and interaction of predators and further ensures we have no impact on our environment. Gindara Sablefish are raised under the guidelines of the Seafood Watch, Ocean Wise, and SeaChoice standards for the best choice in sustainability.

The Wreckfish is a bottom dwelling large growing species that is very similar to Grouper. The Wreckfish can be found from 150'-2000'. The name "Wreckfish" comes from inhabiting shipwrecks and "Stone Bass" from the rocky ledges. The Wreckfish packs on the moisture for body temperature regulation in cold waters. The species can grow very large all the while maintaining the silkiness and sweetness of Grouper. Prepare larger cuts with moderate heat and the smaller fillet portions more quickly. Enlightened management measures are fundamental to any lobster fisheries self-sustainability and should always be the first choice when considering methods for increasing or preserving stock levels. Current Irish lobster fishery regulations include: a) A minimum size for the lobsters landed which is a carapace length of 87 mm. b) Ban on the landing of lobsters that have been “V” notched or have a mutilated tail fan. c) Prohibition of capture of lobsters by SCUBA diving, and d) Licensing of all commercial fishing vessels. A Restaurant Ready Whitewater Mussel trade or Big One Mussel is a bottom cultured product fished from the cool waters of New England. Post-harvest, the mussels are shipped to our facility located on Narragansett Bay, Rhode Island where the Restaurant Ready process begins.
