A reasonable resemblance to the fillet shape of Sea Bream and Snapper, however, the Rockfish surpasses those species in "Fat". The Rockfish is a deep water species that packs on "fat" to regulate body temperature. This translates to an incredible silkiness and succulence. The Paper White Cooked flesh is mild and slightly firm with incredible flake. The Rockfish is clean and opaque raw and is a formidable Sashimi and Sushi choice. With all of the creaminess of Tai and Madai, the Rockfish holds up to the most educated palates. Sashimi, Ceviche, Saute, Broil.
Moist, Flaky, Rich, Buttery
Bluenose is one of the great New Zealand Food Fish. It inhabits deep offshore trenches, and produces some of the most succulent flesh from New Zealand waters. The deep water habitat forces the species to adapt to the environment. This translates to a rich "antifreeze" within the muscle structure. This "fat" is found in many of the world's most popular fish. King Salmon, Northern Halibut, Butterfish, and Black Cod all have this. Bluenose offers a clean and versatile fillet from market sizes ranging 10 to 25 lbs. The white fat in the muscle striations flake large and moist.
Clean, Natural
King Salmon flesh is an attractive dark pink to red colour. Its oil content is higher than any other Salmon and it is a rich source of Omega-3 fatty acids.
