From the Fishery:
To us, sustainable fishing, farming, processing, and sourcing means:
Our fish always comes from well-managed fisheries, or those with Fisheries Improvement Plans in place with healthy stocks. We continue to undertake research to ensure we manage fisheries with the best practices and quality of scientific information available.
The methods we use to fish and farm are aimed to reduce unintended impacts. This means ensuring we utilize the fish we catch, avoid significant negative impact on young fish or their habitat and develop the best practices to reduce the risk of bycatching marine animals and seabirds.
We make sure we minimize impacts on any endangered or threatened species by using technology, research, and mitigation programs, as well as supporting protection areas.
We trace our products from boat to plate.

The King Salmon species makes up less than 0.5% of the global Salmon population, yet is regarded by many as the pinnacle Salmon species. King Salmon boast bright silver skin. They have a rounder mid-section in comparison to the longer, thinner body of the common Atlantic Salmon species, resulting in a generous fillet. King Salmon have a bright, vibrant orange flesh colour, which contrasts attractively with the marbled fat lines for unsurpassed plate appeal. King Salmon are naturally high in healthy Omega-3s – up to twice that found in Atlantic Salmon. This also greatly reduces the risk of over-cooking as the higher oil content keeps the Salmon moist.

The Flame Snapper inhabit the rocky deep off the coast of Australia. They are known to live up to 1300 feet below the surface. The cold depths of their range produce a clean and moist protein that rivals any Snapper in their sweet and rich profile. Typically a larger Snapper, the Flame Snapper produces a very versatile fillet. The thickness allows perfect portioning and a remarkable plate presentation. The Flame Snapper also provides a beautiful deep pink to red skin that crisps wonderfully. The skeleton offers a clean yet rich ingredient for stocks, consommes, and fumets.
