Sanford Ltd King Salmon
In the southern most inhabited island of New Zealand, Stewart Island, where the water is cool and clean all year round we farm raise Chinook or King Salmon. Our natural breeding program produces eggs that are grown out to young fry at our two hatcheries located on two of the largest and cleanest rivers that have their origins in the snow fed glaciers in the Southern Alps of New Zealand - the Clutha and Waitaki rivers.
King salmon flesh is an attractive dark pink to red colour. Its oil content is higher than any other salmon and it is a rich source of Omega-3 fatty acids.

Rich, Creamy, Light, Flakey
It is found from tide pools to 600 feet deep in the water column, in and around rocky structures, hard bottoms, and occasionally over mud and sand bottoms. The California Scorpionfish is normally between 7 and 14 inches in length, reaching a maximum of 17 inches. Light, Clean, Tender, Silky
The Alfonsino is a distant Cousin to the Sumatra Fighting Fish, a salt water Beta. They are more closely related to Hawaiian Ehu. The Fish are 5-7 lbs at their largest. Alfonsino have been described as "Melt in Your Mouth".
Moist, Halibut-like
Escolar has a very white flesh and is sometimes consumed raw as sushi or sashimi. Filleted and cut into thick steaks, escolar can be cooked in numerous ways: pan-fried, braised or grilled. The flavor of its moist white flesh is a bit like that of halibut. It lends itself well to both traditional and exotic recipes. Grilling will tend to reduce the heavy fat content whereas battering will not.
