Red crawfish dominate most farms, especially in south Louisiana and in most places in the Atchafalaya Basin. White crawfish are slightly more plentiful on north Louisiana farms and in Mississippi River overflow swamps. Most crawfish are harvested between December and June, but March, April and May are the peak months in Louisiana.

The Yellowfin Tuna is among the larger Tuna species, reaching weights of over 400 pounds. The Yellowfin is a revered ocean predators, feeding on lean fish. This lends a rich but clean flavor that works wonderfully in raw and rare applications. Sashimi, Sushi, Tartare, Poke, Sear, Grill.
White, Mild, Flakey
Winter Flounder are a "Right-Eyed" Flounder and are cousin to the Plaice. "Left-Eyed" Flounder include Fluke (Summer Flounder), Southern Flounder, and Gulf Flounder. It is reasonable to state that the Winter Flounder inhabit colder waters and in turn have a higher content of body fat, producing more moisture in the flesh.
