Carabineros are "Parte superior del mundo". Top of the world!!! Carabineros reign supreme in Mediterranean Fine Dining. Red Shrimp boast a natural Lobster-Like Sweetness and a very Robust "Sea" Flavor. Revered for the almost absurd size the Carabinero is by far the largest Red Shrimp on the market. Culinary applications demand skill and respect of the product. Treat as a delicate small Lobster and it is a protein without reproach. Poach, Grill, Saute, Steam, Crudo.
Moist, Flaky, Rich, Buttery
Bluenose is one of the great New Zealand Food Fish. It inhabits deep offshore trenches, and produces some of the most succulent flesh from New Zealand waters. The deep water habitat forces the species to adapt to the environment. This translates to a rich "antifreeze" within the muscle structure. This "fat" is found in many of the world's most popular fish. King Salmon, Northern Halibut, Butterfish, and Black Cod all have this. Bluenose offers a clean and versatile fillet from market sizes ranging 10 to 25 lbs. The white fat in the muscle striations flake large and moist.
Steaky, Clean, Ocean flavor
Ono marinates beautifully, and is complimented by an array of moderate flavors. It has a versatile list of application and holds up to any raw or high heat methods. Sashimi, Ceviche, Sear, Grill, Poach
